Nuts do not all behave the same once they are milled. Peanuts and walnuts oxidise quickly, which is why spreads built on them usually need added fat to hold together.

Very thick consistency, really hard to stir the spread, coarsely ground hazelnuts, which I don't like, and the taste is more bitter than sweet, it tastes to me like melted dark chocolate with tiny nut bits, I remember years back it had a better taste and a completely smooth consistency, I think they used to put coconut oil in it back then

The current Nougat Cream recipe contains only hazelnuts (60%), cane sugar, cocoa powder and cocoa mass, with no added oils, so the consistency can vary slightly with temperature and the nut batch – thorough mixing or briefly warming the jar in warm water helps.

I bought it on sale before Christmas and when I opened it I understood why it was on sale. The consistency - it's very thick, you can grate it rather than pour it over your porridge. Taste-wise it's great but clearly something went wrong in the production process because it's very firm.

thank you for your feedback. We'd like to assure you that the Nougat is definitely fine and this is not a fault in the production process. This cream naturally has a higher proportion of quality fats and can set firmly in a cooler environment, which shows exactly as you describe – as a very thick consistency.

We recommend placing the jar in a container of warm (not boiling) water for a few minutes, or leaving it at room temperature for a while. The cream will then loosen nicely and take on the smooth, creamy consistency you are used to.
