If we had to recommend one healthy dish for everyone, it would probably be a good-quality soup. What is more, soups are very useful if you want to improve your children’s diet and get more vegetables into them. We recommend blended soups, which most children have no problem with. But as you know us, we like innovation in the kitchen, so we have picked something new for you: an Indian cucumber soup.
Instructions:
- Roughly chop the onion, garlic and cucumbers.
- Melt the butter in a large pan and fry the onion over a low heat until soft.
- Add the cucumbers and lower the temperature. Cook for 5 min.
- Add the stock, the cream and the collagen and bring the soup to the boil. You can season it with sea salt and black pepper.
- Add the chives and parsley together with the squeezed lemon and cook for another 5 minutes.
- Blend everything to the smooth consistency you want.
- Once cooled, the soup can be served with chickpeas or a piece of good sourdough bread.
