The recipe is for everyone who likes something nice to eat and at the same time does not want to burden their digestion and metabolism with an unnecessary amount of carbohydrates and with gluten and lactose, which some people find difficult. An ideal dessert for those who want to change their routine but do not like extremes.
The “batter” is made from just two ingredients — eggs and banana. The finishing touch comes from the wonderful pistachio cream we created with the experienced top chef Martin Záhumenský.
In the recipe we combined selected pistachios and premium olive oil in order to tune the natural sweetness of the cream Powerlogy Pistacchio, with which we managed to win the prestigious Great Taste award in London and join the world’s best in quality and taste. Like all our other products, we tested the cream so that it sits well with the metabolism and digests without trouble.
You can eat it with a spoon straight from the jar, or use it as an ingredient in granola, or simply on a spoon with banana, strawberries and peaches. It can also be worked into smoothies, shakes or puddings. It is excellent in home baking or cooking too, as a source of good-quality fats. Since it contains minimal carbohydrates, it is also suitable for making snacks in a low-carb or even keto style. That is why these gluten-free and lactose-free pancakes also meet the criteria and principles of so-called paleo eating.
Method:
- Blend the eggs with the bananas using a stick blender
- Fry over a low heat in ghee butter, which withstands high temperatures and gives the pancakes a buttery taste.
- Finish the pancakes to your preference; I recommend fresh fruit and a good helping of pistachio cream.

Pancakes are the ideal sweet weekend breakfast that never gets boring. And if you happen to finish off the pistachio cream (though nobody will believe that anyway), no harm done. There is still hazelnut cream, almond or cashew cream.
