Why is this cake a better choice?
The main reason is the fact that this cake contains less sugar than ordinary sweet recipes. If you use birch or coconut sugar, you gain a further functional benefit. The cake will be pleasantly sweet, but thanks to these kinds of sugar your blood sugar, and therefore your insulin, will rise only mildly.
Why you do not have to compromise on taste
Less sugar and still a pure taste? Yes! The cake contains less sugar, but its pure taste is completed by authentic ingredients. Using good quark, cream, real cacao and chocolate fully replaces large amounts of sugar or margarine. On top of that, by adding collagen you treat your body to extra nutrition. In the end, without much effort, you create a beautiful cake that combines much-loved flavours.
Method:
- Whisk the egg whites and set them aside.
- Warm the milk and melt the chocolate in it, then let it cool for a while. Mix this mixture with the bananas, yolks, sugar and MCT oil (careful, the melted chocolate must not be hot).
- After mixing thoroughly, add the egg whites and the baking powder. Then cook the vanilla pudding.
- Pour the batter for the base into a roughly 20×30 cm or 24×24 cm tin and make “blobs” of pudding in it. You can also join the batter and the pudding with a toothpick to create a marbled effect.
- Bake for about 30-35 min at 180 degrees (it is best to test the batter with a toothpick – if the base does not stick to it, the cake is baked).
- Once baked, mix the quark with the cream and the collagen and layer it onto the cooled cake.
- Decorate with chocolate and cashew cream.
