Which dessert would you travel all the way to far-off, sunny Italy for?
For us it is clearly a fluffy sponge soaked in coffee and layered with a delicious cream. This sweet dessert, known as Tiramisu, comes from historic Venice and has won fans all over the world.
Here is a recipe for a lighter alternative, made with no refined sugar – it is sweetened only with honey – and with no shop-bought sponge fingers. The recipe does not take much time and you will be surprised how easily you can make a flourless sponge at home.
We finished our Powerlogy tiramisu with nougat cream and soaked the sponge in our organic coffee, so as well as a great taste you get a proper dose of energy. Try it and taste for yourself how it can be done in a lighter yet delicious way.
Method:
- Make the sponge:
- In a mug or a ceramic bowl suitable for baking, mix the egg, yoghurt, our MCT oil and the vanilla extract to a smooth consistency.
- Add the coconut flour and baking powder and mix together.
- Then put it in the microwave for about 2 minutes.
- The sponge is done when it is firm and turns out easily; then leave it to cool.
- Make the cream:
- Whisk the mascarpone and the cream until stiff.
- Add our cashew cream and the honey and fold them in carefully so as not to knock the air out of the cream.
- Cut the sponge into 4 pieces and dip each one in the espresso made with our organic coffee.
- Start layering the tiramisu jar:
- Put a piece of sponge on the bottom, then a spoonful of our nougat cream , then the cream, and repeat until the jar is full.
- You can decorate the top with a dusting of cacao.
- Chill well and enjoy.
