Homemade Powerlogy madeleines

Summer is in full swing, the holidays have started, parents are taking their leave and every corner of Slovakia is filling up with tourists. But what to take with you on the road if you suddenly get hungry on an all-day hike or are simply overcome by a craving for something sweet? Try our fresh, gluten-free madeleines for the road.

Why are our madeleines healthier than the usual supermarket sweets?

First of all because they are made at home without any unnecessary additives. They are also suitable for people with allergies, because they are free from gluten and from milk protein (casein). They contain our Powerlogy Organic Ghee Butter 320 ml, one of the most stable sources of good fat, and single-grain gluten-free flours. Compared with other over-sweetened treats we have also reduced the amount of sugar and used a better one – unrefined coconut sugar.

Why you do not have to compromise on taste

Even though at first sight the madeleines may seem almost “too healthy”, in flavour they match any commercial sweet and children certainly will not resist them either. For flavouring we used quality Tahitian vanilla and the zest of an unwaxed lemon. To make the madeleines a little more interesting, we can dip one end into Powerlogy Chocobar 70 % 50 g and sprinkle them with crushed nuts. It is better to make this version at home, though, and take the “plain” madeleines on the road so that the chocolate does not melt in your rucksack. 😉 Alternatively, take your favourite cream with you and spread it on the madeleines before eating.

  • Melt the ghee butter and let it cool.
  • Whisk the eggs with the sugar to a foam using a hand mixer.
  • Mix all the flours together with the baking powder, vanilla and salt and add them to the eggs.
  • Stir in the lemon zest and pour in the butter.
  • Transfer the finished batter into a piping bag and grease the silicone madeleine mould with melted butter.
  • Then pipe the batter from the bag into the mould, filling it to about ¾ (the madeleines rise a little during baking).
  • Bake them in a preheated oven at 180 °C for about 18 minutes (it depends on your oven).
  • Once cooled, the madeleines can be dipped at one end into melted chocolate and sprinkled with nuts.
