Dates stuffed with coconut cream make an excellent quick dessert for unexpected guests, and just as good a snack waiting in the fridge as first aid for when you come home drained from work.
Method:
- Stone the dates and leave them open.
- Slice the banana into rounds or half-rounds (depending on the size of the dates) and tuck them into the open dates.
- Using a small spoon, fill the dates with coconut cream. It is easier to work with if the cream has been out of the fridge for a few hours beforehand.
- Melt a few squares of dark chocolate and pour it over the dates, or dip them into it.
- Chill for at least an hour so the coconut cream sets.
This dessert keeps in the fridge for a few days, so you can make a whole box of them ahead of time.
