Energy balls

Length of preparation: 30 minutes Number of persons: 7

Method:

  1. Put the quinoa flakes / granola and the apricots into a blender with a chopping blade and blitz them.
  2. Add the hazelnut cream and mix again with a few presses of the pulse button.
  3. Add honey as needed (depending on how sweet the apricots are) and apple purée (in case the mixture seems dry and won’t hold together).
  4. Shape into balls and put them in the fridge to chill.

A BONUS for you:

Apple purée is very simple to make:

  • Wash the apples, peel them and remove the cores. Cut them into small cubes and put them in a pan.
  • Add a little water, the juice of half a lemon, and simmer until the apples are soft.
  • Take them off the heat and blend the apples into a purée.
  • Divide the finished purée between small glass jars, seal them and leave them to cool upside down.
  • The purée does not need sweetening – if the apples do turn out a little tart, add a teaspoon of honey.
