Autumn brings with it the taste and scent of sweet apples, which are nourishing and full of vitamins. We decided to use them as a sweet, baked side to fluffy pancakes that are ready in a few minutes.
The best part is that the mix is ready to go – you only need to stir it with your favourite milk and the batter is done. We flavoured ours with cinnamon and Powerlogy turmeric spice.
Method:
- In a larger bowl, mix 250 g of pancake mix, 1/2 tsp of ground cinnamon and 1/2 tsp of Powerlogy turmeric spice.
- Mix thoroughly with a whisk and leave to stand for a few minutes.
- Over a moderate heat, cook the pancakes on both sides in good-quality ghee butter; when bubbles start to form in the batter, turn the pancakes and cook the other side.
- Put the chopped apple into a pan and stew it in a little water, then add 1 tbsp of maple syrup, 1 tbsp of lemon juice and a pinch of cinnamon, and stir.
- Serve the finished pancakes with the apples, our almond cream and your favourite yoghurt.
