Method:
1. Wash the basil, dry it and put it into a blender together with the other ingredients.
2. Blend the pesto until smooth and finish by seasoning it with sumac.
3. Meanwhile, cook the sweetcorn, chop the vegetables and tear up the salad leaves.
4. Put the rice noodles into a bowl, cover them with boiling water, add salt and leave them a few minutes to soften.
5. Drain the water from the noodles and stir in a little oil so that they do not stick together.
6. Layer the vegetables on a large plate, sprinkle them with olive oil, add the rice noodles, pour the basil pesto over them and place the sweetcorn in the middle.
Extra tip: Whenever I make a bowl like this, besides raw vegetables I always have something cooked as well (depending on the season). Today it was sweetcorn, sometimes it is broccoli or asparagus. To give your pasta a more interesting taste, try covering it with the water in which you cooked or blanched a particular vegetable.
