Why is this chia pudding the better choice?
The pudding contains no gluten, lactose or casein, which makes it an easy dessert if you avoid those. On top of that it is made largely of chia seeds, which are counted among superfoods. They contain omega 3 fatty acids, plenty of calcium, magnesium, phosphorus, potassium, zinc, iron and copper. All important nutrients.
Why you don’t have to compromise on taste
The pudding contains no milk and no gluten, but that has taken nothing away from the taste. Banana is a tried-and-tested classic that never disappoints in sweet recipes. 🙂 And the combination of a soft pudding with crunchy granola guarantees you a treat. Even from a seemingly simple dessert.
Method:
- Mash the banana with a fork to a purée.
- Add the coconut milk and chia seeds and leave in the fridge for about 1 hour (if the pudding is too thick, add more milk).
- Layer the banana pudding into a glass, then a few spoons of coconut yoghurt, the fruit, gluten-free granola and pieces of chocolate.
It tastes excellent as a dessert or as a quick breakfast, which you can make the day before and leave in the fridge (add the granola only at the end so it does not go soft).
