We have a tip for you for a quick and simple lunch that is ready in no time. You can even make it during your lunch break while working from home! Making crispy roast potatoes may look a little time-consuming at first sight. But if you part-cook them the evening before, then before lunch you only mix them with the dressing, press them down, and they roast in half an hour. And you can carry on working undisturbed in the meantime. ?
Method:
- Boil the potatoes in their skins. Be careful not to overcook them.
- Drain the water and mix the potatoes with the dressing made of olive oil, spices, herbs and salt.
- Arrange them on a baking tray lined with baking paper, leave space between the individual pieces and press down on them with the bottom of a glass so that they flatten slightly (you get a small patty). You can also brush the tops with the remaining dressing.
- Roast the potatoes at 190 °C for about 25-30 minutes until crispy.
- The dressing is very simple to make – put all the dressing ingredients in a bowl and mix until smooth.
- Serve with the dressing and, for example, with a leaf salad.
