Wondering how to enjoy our poppy seed and granola combination in another way than in yoghurt or oats? Make these quick, fluffy pancakes, which taste irresistible with Poppy Seed Cream in the batter and a pleasant crunch on top!
The pancakes are made without wheat flour and without refined sugar. Please note that the filling contains dairy yoghurt. We fried them on clarified Ghee Butter, which is free from milk proteins.
Method:
- Preheat a pancake pan and grease it with Ghee Butter.
- In a bowl, whisk 250 ml of rice milk with 3 eggs and 2 tbsp of Poppy Seed Cream.
- Then add 100 g of coconut flour and 1 tsp of phosphate-free baking powder to the bowl and mix everything into a smooth batter.
- Let the batter rest for a while, then fry the pancakes one by one, turning them as soon as bubbles start to form, about 2-3 minutes on each side.
- Fill the pancakes with good-quality yoghurt mixed with Honey Strawberry Granola — no extra sweetener or sugar needed.
- Finally, we stewed plums with our Poppy Seed Cream, which pairs perfectly with the taste of plums.
